COHO WINERY 2012 Summit Vine Ranch Diamond Mountain District Cabernet Sauvignon: Darker than black cherries, dense like blackberry jam, but not a sweet or overcooked wine.  This is an elegant cabernet that is a great accompaniment to virtually any meal; salmon, poultry, beef or lamb.  Perfect for that special event. This wine ranks in the top 5% of wines from Napa's famous Diamond Mountain District. This Dry Muscat may just be better than anything coming out of Alsace. A lovely expression of Dry Muscat. All the pretty varietal characteristics- orange blossom, citrus, spice, cardamom, and apricot- with perfectly balanced medium plus acidity and a clean, bright finish. The temperate climate brings extended hang time, and the soils cause the vines to stress and strain as they grow. Sextant Wines 2018 Caverio Founder’s Collection:  Hand picked from the winery’s RBZ vineyard in the El Pomar sub AVA of Paso Robles, the 2018 Caverio is comprised of 85% Grenache, 6% Syrah, and 9% Mourvèdre. Each varietal is fermented and aged separately with a mix of new and used French and Hungarian oak.   The winery was particularly happy with the way their Grenache showed this vintage, so they chose to blend in a small portion of Syrah for tannin and Mourvèdre to add depth to the aroma. Each varietal was barrel aged for 20 months before bottling, and this wine was bottle aged for nearly a year before release.  The wine exhibits a layered symphony of aroma and flavor. Red plum, strawberry, cinnamon and nutmeg immediately open up in the glass. As it breathes, you’ll find notes of fresh potting soil and red clay. The palate has a watermelon like smoothness, with creamy tannin and structure that invites you back for more after every sip.  Will live long in the bottle.  $70 Value VINA ROBLES 2017 Cabernet Sauvignon:  Lush aromas of black cherry, caramel and mocha cream. The palate starts soft and inviting, with more cherry and caramel, then firms up with tighter tannins and penetrating acidity.   Winemaker’s notes: “The fruit for our 2017 Cabernet Sauvignon was selected from two of our estate vineyards in Paso Robles – Huerhuero and Creston Valley. Huerhuero Vineyard, in the hilly terrain between the El Pomar and Geneseo Districts, benefits from the moderating Pacific breezes that blow through the Templeton Gap in the afternoon as well as its limiting calcareous subsoils. Creston Valley Vineyard has picture perfect high terrain, southern exposure and shallow soils with noticeable granulated limestone. Both of these vineyards produce Cabernet Sauvignon with an overall balance of expressive flavors and structure. All the blocks were handpicked and sorted in the early morning to ensure quality and uniformity of ripeness. Then the fruit was destemmed and gently crushed into temperature controlled stainless steel tanks. Pumpovers took place regularly to enhance color and help extract tannins from the skin. After pressing, the wine was racked into barrels to complete malolactic fermentation. While the majority of wine was aged in French oak, we also used some American and Hungarian oak barrels for added nuances and complexity. After 8 months of aging and extensive blending trials, a bit of Petit Verdot was added to enhance structure.
